Ingredients
  

  • 113 g melted butter
  • 250 g sugar
  • 3 eggs eggs
  • 240 g self-rising flour
  • 150 g blueberries fresh or frozen

Method
 

  1. Preheat the oven to 350 degrees Fahrenheit. Grease an 8.5 x 4.5-inch pan with nonstick cooking spray and line with parchment paper. Set aside.
  2. In a large bowl, add melted butter, sugar, and eggs. Whisk until well combined.
  3. Add self-rising flour and blueberries to the bowl, then stir until just combined.
  4. Pour the batter into the prepared pan and bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool completely before slicing.

Notes

This bread is best enjoyed fresh, but can be stored in an airtight container for a few days. Try adding nuts or other fruits for a variation!
