- In a high-speed blender or food processor, combine the cottage cheese, cocoa powder, honey or maple syrup, and vanilla extract.
- Blend on high speed until the mixture is smooth and creamy, scraping down the sides as needed.
- Divide the mousse into 4 or 6 small ramekins or cups.
- Chill the mousse in the refrigerator for at least 30 minutes before serving.
- Garnish with fresh raspberries, mint leaves, or a light dusting of cocoa powder, if desired.
Notes
For a fun twist, try adding a pinch of sea salt or a sprinkle of cinnamon to enhance the chocolate flavor.
