Ingredients
  

  • 185 g uncooked white rice
  • 480 ml water or chicken broth for more flavor
  • 454 g ground beef or turkey for a lighter option
  • 1 packet taco seasoning about 1 oz.
  • 425 g black beans drained and rinsed
  • 150 g corn frozen or canned
  • 150 g diced tomatoes fresh or canned
  • 100 g shredded lettuce
  • 100 g shredded cheddar cheese
  • 120 ml salsa for topping
  • 30 ml olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 20 g fresh cilantro optional for garnish
  • 1 piece lime wedges optional for garnish

Method
 

  1. Cook the rice according to package instructions, using water or chicken broth.
  2. Heat olive oil in a skillet over medium heat. Add ground beef or turkey and cook until browned.
  3. Drain excess fat from the skillet. Add taco seasoning and stir to combine.
  4. Add black beans, corn, and diced tomatoes to the skillet. Cook until heated through.
  5. Assemble the bowls by placing a layer of cooked rice at the bottom.
  6. Top with the meat and vegetable mixture, shredded lettuce, and cheddar cheese.
  7. Add salsa and garnish with fresh cilantro and lime wedges if desired.
  8. Serve immediately and enjoy!
