Ingredients
  

  • 200 g Biscoff Cookies (Speculoos Cookies) finely crushed
  • 100 g Cream Cheese softened
  • 200 g Melting Chocolate (for Coating) use your favorite type

Method
 

  1. Crush the Biscoff Cookies in a food processor or a sealed Ziploc bag until they resemble fine sand.
  2. In a medium mixing bowl, combine the crushed Biscoff crumbs with softened cream cheese until a thick, uniform dough forms.
  3. Use a small cookie scoop or tablespoon to portion out the mixture and roll into smooth balls, about 1-inch in diameter.
  4. Chill the rolled truffles in the refrigerator for at least 30-60 minutes to firm up.
  5. Melt the chocolate using the microwave or double boiler method while the truffles chill.
  6. Gently coat each chilled truffle in the melted chocolate using a fork or dipping tool.
  7. If desired, add decorations immediately after coating while the chocolate is still wet.
  8. Return the coated truffles to the refrigerator for another 15-30 minutes to allow the chocolate to fully set.
