Method
- Crush the Biscoff Cookies in a food processor or a sealed Ziploc bag until they resemble fine sand.
- In a medium mixing bowl, combine the crushed Biscoff crumbs with softened cream cheese until a thick, uniform dough forms.
- Use a small cookie scoop or tablespoon to portion out the mixture and roll into smooth balls, about 1-inch in diameter.
- Chill the rolled truffles in the refrigerator for at least 30-60 minutes to firm up.
- Melt the chocolate using the microwave or double boiler method while the truffles chill.
- Gently coat each chilled truffle in the melted chocolate using a fork or dipping tool.
- If desired, add decorations immediately after coating while the chocolate is still wet.
- Return the coated truffles to the refrigerator for another 15-30 minutes to allow the chocolate to fully set.
