Ingredients
  

  • 150 g untoasted sesame seeds Provides a nutty flavor and crunchy texture; toasting brings out their natural oils and sweetness.
  • 170 ml honey Acts as a natural sweetener and binds the sesame seeds together; choose raw honey for an extra health boost.
  • 15 ml extra virgin olive oil Used for brushing the pan to prevent sticking.

Method
 

  1. Line a small sheet pan with parchment paper and brush it lightly with extra virgin olive oil.
  2. Add the untoasted sesame seeds into a nonstick pan over medium heat. Stir constantly until they gleam and turn golden brown, about 3-4 minutes.
  3. Return the pan to medium heat, then pour in the honey. Stir continuously until it warms up and begins to bubble around 250°F, boiling for about 3-4 minutes.
  4. Carefully add the toasted sesame seeds back into the pan with the boiling honey. Stir constantly for about 5 minutes until everything is well combined and coated in the sweet goodness.
  5. Quickly pour the honey and sesame blend onto the prepared sheet pan. Spread it evenly and flatten it using parchment paper or a rolling pin for uniform thickness.
  6. Allow the candy to cool for about 20 minutes before cutting it into small rectangular bars or squares with a sharp knife.
