Method
- Line a small sheet pan with parchment paper and brush it lightly with extra virgin olive oil.
- Add the untoasted sesame seeds into a nonstick pan over medium heat. Stir constantly until they gleam and turn golden brown, about 3-4 minutes.
- Return the pan to medium heat, then pour in the honey. Stir continuously until it warms up and begins to bubble around 250°F, boiling for about 3-4 minutes.
- Carefully add the toasted sesame seeds back into the pan with the boiling honey. Stir constantly for about 5 minutes until everything is well combined and coated in the sweet goodness.
- Quickly pour the honey and sesame blend onto the prepared sheet pan. Spread it evenly and flatten it using parchment paper or a rolling pin for uniform thickness.
- Allow the candy to cool for about 20 minutes before cutting it into small rectangular bars or squares with a sharp knife.
