- ½ cup mini chocolate chips
Instructions
- Toast pecans at 350°F for 8–10 minutes until fragrant, then let cool.
- Pulse pecans in a food processor until coarse crumbs form.
- Add dates, vanilla, and salt, then process until a sticky dough forms.
- Add chocolate chips and pulse briefly to combine.
- Scoop and roll into balls using your hands.
- Chill for 20–30 minutes or enjoy immediately.
Notes
Use soft Medjool dates for best texture. Avoid over-processing to keep some crunch. Chill dough if too sticky before rolling.
