Instructions
- Preheat oven to 350°F and grease a muffin tin.
- Blend cottage cheese and Greek yogurt until smooth.
- Whisk eggs, blended mixture, and vanilla in a bowl.
- In another bowl, mix flour, protein powder, baking powder, cinnamon, and salt.
- Combine wet and dry ingredients gently.
- Fold in optional add-ins.
- Divide batter into muffin cups.
- Bake 20–25 minutes until golden.
- Cool in pan for 10 minutes before removing.
