- 2 boneless, skinless chicken breasts
- 1 can great Northern beans, drained and rinsed
- 1 cup low-sodium chicken broth
- 1 (4 oz) can green chilies
- 1/2 onion, finely diced
- 2 cloves garlic, minced
- 1/2 tsp cumin
- 1/2 tsp dried oregano
- 1/4 tsp chili powder
- 1/2 tsp salt
- 4 oz cream cheese, cubed
- Juice of 1/2 lime
Instructions
- Add chicken breasts, beans, broth, chilies, onion, garlic, cumin, oregano, chili powder, and salt to crockpot. Place chicken at bottom.
- Cook on LOW 6-8 hours or HIGH 3-4 hours.
- Shred chicken with two forks directly in crockpot.
- Add cream cheese and lime juice in last 30 minutes. Stir until melted and creamy.
- Taste, adjust seasonings, and serve hot with toppings of choice.
Notes
Add cream cheese only in the final 30 minutes to prevent curdling. Frozen chicken requires 1-2 extra hours on LOW. Don’t skip the lime juice for balanced flavor.
