Ingredients
- 4 cups fresh broccoli florets (or frozen, thawed and drained)
- 2 cups shredded sharp cheddar cheese, divided
- 1 can (10.5 oz) cream of mushroom soup (or cream of chicken/celery)
- 1 cup whole milk (2% or heavy cream for richer texture)
- 1 cup seasoned breadcrumbs (or crushed Ritz crackers)
- Salt and pepper to taste
Smart Substitutions: Use Gruyère instead of cheddar, almond milk for dairy-free, or Greek yogurt with broth instead of canned soup for a lighter version.
Instructions
- Preheat oven to 350°F (175°C) and lightly spray a 9×13-inch baking dish with nonstick spray.
- Bring salted water to a boil and blanch broccoli for 3 minutes. Transfer to an ice bath, drain, and pat dry.
- In a large bowl, whisk soup and milk until smooth. Stir in half of the shredded cheddar until slightly melted.
- Fold broccoli into the creamy mixture, seasoning with salt and pepper to taste.
- Spread evenly in prepared baking dish. Top with remaining cheese and breadcrumbs.
- Bake 25–30 minutes until bubbly and golden brown on top. Cool 5 minutes before serving.
