Valentine’s Linzer Cookies are delicate almond shortbread sandwich cookies filled with sweet raspberry jam and finished with a powdered sugar dusting. With their classic heart cut-out design, these cookies make the perfect romantic treat for Valentine’s Day gifts and celebrations.

- 3/4 cup unsalted butter, softened
- 1 1/2 cups ground almonds or almond flour
- 1/2 tsp baking powder
- 1/2 cup granulated sugar
- 2 1/4 cups cake flour
- 1/4 tsp vanilla extract
- 1 large egg, room temperature
- 1/2 tsp cinnamon
- 1/2 tsp fresh lemon zest
- 6 oz raspberry jam
- Powdered sugar for dusting
Instructions
- Cream butter until light and fluffy.
- Add sugar and beat until combined.
- Mix in egg, vanilla extract, and lemon zest.
- In a separate bowl whisk cake flour, almond flour, baking powder, and cinnamon.
- Add dry ingredients to wet ingredients gradually and mix until dough forms.
- Divide dough into two disks and wrap tightly.
- Chill dough for at least 1 hour.
- Roll dough between parchment paper to 1/8-inch thickness.
- Cut half the cookies solid and half with heart cut-outs.
- Bake at 350°F for 10–12 minutes.
- Cool cookies completely.
- Spread jam on solid cookies.
- Top with cut-out cookies and fill centers with jam.
- Dust with powdered sugar before serving.
Notes
Chill dough thoroughly for clean cut-outs. Assemble cookies the day of serving for best texture and appearance.
