- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp grated fresh ginger
- 2 cloves garlic, minced
- 1/2 tsp red pepper flakes
- 1 cup fresh pineapple, diced
- 1/2 red bell pepper, diced
- 1/4 red onion, finely diced
- 1/4 cup chopped cilantro
- 1 jalapeño, minced
- 2 tbsp lime juice
- 1/4 tsp salt
- 12 small corn or flour tortillas
- 1 tbsp olive oil
- 1/2 cup shredded cabbage or slaw mix
Instructions
- Whisk soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes together.
- Add chicken and toss to coat evenly.
- Cover and marinate for at least 30 minutes.
- Heat olive oil in a skillet over medium-high heat.
- Drain marinade and cook chicken for 5 to 7 minutes until golden and cooked through.
- In a bowl, mix pineapple, bell pepper, onion, cilantro, jalapeño, lime juice, and salt.
- Warm tortillas until soft and pliable.
- Layer cabbage, chicken, and pineapple salsa onto tortillas.
- Serve immediately with optional toppings.
Notes
Cook chicken in batches to avoid overcrowding and always warm tortillas to prevent cracking.
