- 1 cup Medjool dates, pitted
- 2 tablespoons almond butter or sunflower seed butter
- 1 tablespoon coconut oil, melted
- 1 cup dark chocolate chips (optional)
- 2 teaspoons coconut oil for chocolate coating
- Flaky sea salt (optional)
Instructions
- Soak pitted Medjool dates in very hot water for 10–15 minutes until soft.
- Drain dates thoroughly to prevent excess moisture.
- Add dates, almond butter, and melted coconut oil to a blender or food processor.
- Blend until smooth and creamy, scraping down sides as needed.
- Line a 9×5-inch loaf pan with parchment paper.
- Spread the blended mixture evenly into the pan.
- Freeze for 2–3 hours until firm.
- Remove and cut into 12 squares.
- Melt chocolate with 2 teaspoons coconut oil in the microwave if coating.
- Dip each caramel square halfway into chocolate and place on parchment.
- Sprinkle with flaky sea salt if desired.
Notes
For best results, ensure dates are fully softened before blending. If mixture is too thick, add a tiny splash of soaking water.
