- 4 boneless skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon vegetable oil
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 1 can (20 oz) pineapple slices, drained
- 1 tablespoon cornstarch
- 2 tablespoons water
- Chopped green onions
- Sesame seeds
Instructions
- Preheat oven to 375°F (190°C). Pat chicken dry.
- Season chicken with garlic powder, onion powder, salt, and pepper.
- Heat oil in an oven-safe skillet over medium-high heat and sear chicken 3–4 minutes per side.
- Mix pineapple juice, brown sugar, and soy sauce until dissolved. Pour over chicken and add pineapple slices.
- Bake 25–30 minutes until internal temperature reaches 165°F.
- Remove chicken and pineapple. Whisk cornstarch and water, then stir into skillet juices over medium heat until thickened.
- Return sauce to chicken before serving. Garnish with green onions and sesame seeds.
Notes
Avoid marinating chicken in pineapple juice for more than 4 hours to prevent mushy texture.
