Description

This Valentine’s Mocktail is a creamy, tropical strawberry drink made with coconut milk and pineapple juice. It’s a refreshing, non-alcoholic option perfect for romantic date nights, Galentine’s parties, or family-friendly Valentine’s celebrations.

Ingredients

Scale
  • 2 cups frozen strawberries
  • 1 cup coconut milk
  • 1/2 cup pineapple juice
  • 1 tablespoon honey or agave (optional)
  • 12 cups ice cubes
  • Fresh strawberries and mint leaves for garnish

Instructions

  1. Add frozen strawberries, coconut milk, pineapple juice, and honey (if using) to a blender.
  2. Blend on high for 30–45 seconds until smooth.
  3. Add ice gradually and blend again until thick and slushy.
  4. Taste and adjust sweetness if needed.
  5. Pour into chilled glasses.
  6. Garnish with fresh strawberries and mint before serving.

Notes

For best texture, use frozen strawberries. Make ahead by blending without ice and adding ice just before serving.
