Description

Easy cherry clafoutis made with juicy fresh cherries and a silky custard-style batter – a simple French dessert that delivers elegant flavor with minimal effort.

Ingredients

Scale
  • pounds fresh cherries, pitted
  • 3 large eggs
  • ½ cup granulated sugar
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • ½ cup all-purpose flour
  • 1 cup milk
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch baking dish.
  2. Arrange the pitted cherries evenly in the prepared dish.
  3. In a blender, combine eggs, sugar, salt, and vanilla until smooth.
  4. Add flour and pulse just until incorporated.
  5. Slowly pour in milk while blending on low speed.
  6. Carefully pour the batter over the cherries.
  7. Bake for 45–55 minutes until puffed, golden, and just set in the center.
  8. Cool for 10–15 minutes, then dust with powdered sugar before serving.

Notes

Serve warm or at room temperature. The clafoutis will puff in the oven and gently deflate as it cools.
