- 1 onion, sliced
- 2 garlic cloves, peeled whole
- 3 cups low-sodium vegetable or chicken broth
- 1 cup water
- Salt and pepper, to taste
- ½–¾ cup cream, half-and-half, or milk
- Optional garnishes: chopped parsley, cracked black pepper, extra cream for swirling
Instructions
- Peel and cut pumpkin into even chunks. Remove seeds.
- Combine pumpkin, onion, garlic, broth, and water in a soup pot. Bring to a boil, then reduce to simmer for about 10 minutes, until pumpkin is fork-tender.
- Remove from heat and blend until smooth using a stick or standard blender.
- Return to low heat and stir in cream or milk. Season with salt and pepper. Do not boil after adding cream.
