- 1/2 cup (115g) granulated sugar
- 1 tsp vanilla extract
- 1 egg white
- 1 1/2 cups (228g) all-purpose flour
- 1 tsp baking powder
For the Caramel Layer:
- 20 caramels, unwrapped
- 1 tbsp milk
For the Chocolate Topping:
- 2 cups (400g) milk chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream butter and sugar until fluffy, 3–4 minutes.
- Beat in egg white and vanilla until combined.
- Mix in flour and baking powder until just combined.
- Roll dough to 1/4–1/2 inch thick, cut into circles, and place on baking sheets.
- Bake 6–8 minutes until puffy and set. Cool completely.
- Melt caramels with milk until smooth. Spread over cooled cookies and chill 10–15 minutes.
- Melt chocolate in 30-second intervals, stirring until smooth. Spread over caramel layer.
- Cool until chocolate is set before serving.
Notes
For a gourmet twist, use sea salt caramels, dark chocolate, or sprinkle with flaky sea salt. Chill cookies properly before adding layers to maintain neatness.
