Ingredients
Scale
- 1 pound beef tenderloin (or filet mignon, cut into small cubes)
- 1 tablespoon olive oil
- 1 cup mushrooms (finely chopped, such as cremini or button)
- 2 tablespoons shallots (finely chopped)
- 2 cloves garlic (minced)
- 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
- Salt and pepper, to taste
- 1 package puff pastry (thawed)
- 1 egg (beaten, for egg wash)
- 1 tablespoon Dijon mustard (optional)
- Flour, for dusting
Substitutions:
- Use vegetable stock instead of olive oil for a vegetarian version.
- Substitute beef with chicken or pork if preferred.
Instructions
- Sear the Beef: Heat olive oil in a skillet over medium-high heat. Season beef with salt and pepper, then sear for 2–3 minutes on each side. Remove and let cool.
- Prepare the Mushroom Duxelles: In the same skillet, add mushrooms, shallots, and garlic. Cook until mushrooms are golden brown (5–7 minutes). Stir in thyme, season with salt and pepper, and let cool.
- Roll Out the Puff Pastry: On a floured surface, roll out puff pastry sheets to about 1/8 inch thick. Cut into 3×3 inch squares.
- Assemble the Bites: Place a spoonful of mushroom duxelles on each square, top with a piece of beef, and fold over. Seal edges with a fork.
- Egg Wash and Bake: Preheat oven to 400°F (200°C). Arrange bites on a baking sheet, brush with beaten egg, and bake for 15–20 minutes until golden brown.
- Serve and Enjoy: Let cool slightly before serving. Best enjoyed warm!
Notes
For extra flavor, brush the beef pieces with Dijon mustard before wrapping. Avoid overcooking the beef for a tender bite. These can be prepped ahead, frozen, and baked fresh for stress-free entertaining.
