A creamy, crunchy, budget-friendly Mexican White Trash Casserole made with Doritos, seasoned chicken or beef, cheese, and a rich taco-flavored filling—perfect for easy weeknight dinners or potlucks.

- 1 bag Nacho Doritos, crushed
- 2 cups shredded chicken or ground beef
- 2 cups shredded cheese
- 1 can (10.75 oz) cream of chicken soup
- 1 can Rotel tomatoes, undrained
- 1/2 cup sour cream
- 1/2 cup milk
- 1/2 package taco seasoning
Instructions
- Preheat oven to 350°F (175°C) and spray a 2-quart casserole dish with nonstick spray.
- In a large bowl, mix chicken or beef with cheese, cream of chicken soup, Rotel tomatoes, sour cream, milk, and taco seasoning.
- Spread half of the crushed Doritos in the bottom of the dish.
- Layer half of the filling mixture over the chips.
- Add the remaining Doritos, then the rest of the filling mixture.
- Top with extra cheese if desired.
- Cover with foil and bake for 35 minutes.
- Let rest for 5 minutes before serving.
Notes
For a spicier version, use pepper jack cheese or hot Rotel. For a lighter option, use Greek yogurt instead of sour cream.
