  • 4 cups beef broth (low sodium)
  • 1 jar (24 oz) marinara sauce
  • 1 can (14.5 oz) diced tomatoes with juices
  • 1/4 cup water
  • 10 oz lasagna noodles
  • 1 1/2 cups cottage cheese
  • 1/2 cup shaved parmesan
  • 1/2 cup shredded mozzarella cheese
  • 1 cup spinach, chopped
  • Optional: 1/2 cup cottage cheese for serving
  • 2 tbsp chopped fresh basil

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and garlic; sauté 3–4 minutes until translucent.
  2. Add ground beef; cook 4–6 minutes, breaking it apart until browned.
  3. Stir in Italian seasoning, salt, pepper, and tomato paste; cook 2–3 minutes.
  4. Add beef broth, marinara sauce, diced tomatoes with juices, and water; stir well.
  5. Break lasagna noodles in half and add to the pot, ensuring they’re submerged. Bring to a boil, cover, and cook 12–15 minutes, stirring occasionally.
  6. Reduce heat to low; stir in cottage cheese, mozzarella, parmesan, and spinach until cheeses melt and spinach wilts.
  7. Let rest 2–3 minutes, then serve hot with a dollop of cottage cheese and fresh basil.

Notes
