  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter

Aromatics and Flavor Base:

  • 1 large Vidalia onion, diced
  • 4 cloves garlic, minced
  • ½ cup dry red or white wine (or broth substitute)

Liquid and Seasonings:

  • 2 cups low-sodium beef broth
  • ¼ cup Worcestershire sauce
  • 2 sprigs fresh thyme
  • 1 bay leaf

Thickening Agent:

  • 3 tbsp cornstarch mixed with 3 tbsp water

Instructions

  1. Pat beef dry and season with salt and pepper.

  5. Cancel sauté. Return beef with juices, add broth, Worcestershire sauce, thyme, and bay leaf.
  6. Seal pot, set to High Pressure for 25 minutes. Natural release for 15 minutes, then quick release.
  7. Remove herbs. Stir in cornstarch slurry. Press “Sauté” and simmer 5–10 minutes until gravy thickens.
  8. Serve hot over mashed potatoes, noodles, or rice.

Notes

For best results, don’t overcrowd beef when searing. Allow natural release for tender meat. Add mushrooms or carrots for extra flavor. Gravy thickens as it cools—adjust with broth if reheating.
