- 1 pound dried 15 bean mix
- 8 cups water or vegetable broth
- 1 large yellow onion, finely chopped
- 3 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1 can (14.5 oz) diced tomatoes
- 1 tablespoon fresh lemon juice
- Salt and pepper, to taste
- Optional: 1–2 cups chopped ham or smoked sausage
- Optional: 1 cup chopped carrots
- Optional: 1 cup chopped celery
- Optional: 1 tablespoon hot sauce
- Fresh parsley for serving
Instructions
- Sort beans and remove debris. Rinse thoroughly under cold water.
- Place rinsed beans in crock pot. Add broth or water, onion, garlic, and bay leaves.
- Add thyme, oregano, and smoked paprika. Add optional meats and vegetables if using.
- Pour in diced tomatoes with liquid and gently stir to combine.
- Cook on LOW 8–10 hours or HIGH 4–5 hours without lifting the lid.
- Stir in lemon juice during the last 30 minutes. Adjust seasoning with salt and pepper.
- Remove bay leaves and serve with fresh parsley.
Notes
Wait to add salt until the end of cooking—adding it early can prevent beans from softening properly.
