A creamy and flavorful spicy salmon sushi bake that delivers all the classic sushi roll flavors in an easy, oven-baked comfort food casserole perfect for sharing.

- 2 cups uncooked sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 lb salmon fillet, skinless and diced
- 1/2 cup mayonnaise
- 2–3 tablespoons Sriracha sauce
- 1 teaspoon sesame oil
- 1/2 cup green onions, chopped
- 1/4 cup cream cheese, softened
- Furikake seasoning, to taste
- 1 sheet nori, cut into strips
- 1/4 cup tobiko (optional)
- Sliced avocado and cucumber, for serving
- Extra spicy mayo, for drizzling
Instructions
- Rinse sushi rice under cold water until water runs clear.
- Cook rice with water according to package instructions.
- Mix rice vinegar, sugar, and salt until dissolved.
- Fold vinegar mixture into hot rice and let rest 10 minutes.
- Preheat oven to 375°F (190°C).
- In a bowl, gently mix salmon, mayonnaise, Sriracha, sesame oil, green onions, and cream cheese.
- Spread sushi rice evenly in a greased 9×9-inch baking dish.
- Sprinkle rice with furikake seasoning.
- Spread spicy salmon mixture evenly over rice.
- Bake for 25–30 minutes until lightly golden and bubbling.
- Let rest 5 minutes.
- Top with nori strips, tobiko, avocado, cucumber, and spicy mayo.
- Serve warm.
Notes
Use short-grain sushi rice for best texture and do not overbake to keep the salmon moist and creamy.
