- 8 oz sharp cheddar cheese, freshly shredded
- 1/3 cup sourdough discard (unfed)
- 2 tbsp unsalted butter, cold and cubed
- 1/2 cup all-purpose flour
- 1 tsp salt
- 1/2 tbsp ranch seasoning (optional)

Instructions
- Add cheese, sourdough discard, butter, flour, salt, and seasoning to a food processor.
- Pulse until a cohesive dough forms.
- Wrap dough and chill for at least 20 minutes.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment.
- Roll dough between parchment to 1/8-inch thickness.
- Cut into 1-inch squares and poke a hole in each cracker.
- Sprinkle lightly with flaky sea salt.
- Bake for 15–18 minutes until golden and crisp.
- Cool completely, then separate crackers.
Notes
For best texture, shred cheese from a block and allow crackers to cool fully before storing.
