- 1 whole chicken (3–4 lb), cut into pieces
- 2 tablespoons Jamaican curry powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 scotch bonnet peppers, whole
- 1 teaspoon allspice
- 2 medium potatoes, diced
- 2 carrots, sliced
- 2 cups chicken broth
- 1 can (13.5 oz) coconut milk
- 2 scallions, chopped
- Juice of 1 lime
- Fresh cilantro, chopped
Instructions
- Season chicken with curry powder, salt, and black pepper.
- Marinate for at least 30 minutes for best flavor.
- Heat oil in a large pot and brown chicken on all sides.
- Remove chicken and sauté onion, garlic, and ginger in the same pot.
- Add scotch bonnet peppers and allspice.
- Return chicken to the pot with potatoes and carrots.
- Pour in chicken broth and bring to a simmer.
- Cover and cook for 30–35 minutes until chicken is tender.
- Stir in coconut milk and scallions.
- Simmer 10 minutes, then remove peppers.
- Finish with lime juice and garnish with cilantro.
Notes
Use Jamaican curry powder only for authentic flavor. Keep scotch bonnet peppers whole to control heat while extracting flavor.
