- 1 cup mayonnaise
- 4–6 garlic cloves, minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon extra virgin olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Pinch of cayenne pepper (optional)
- 1 teaspoon Dijon mustard
- 1 tablespoon chopped fresh parsley or chives
Instructions
- Finely mince the garlic and mash into a paste if desired.
- Add mayonnaise to a mixing bowl.
- Stir in garlic, lemon juice, and olive oil.
- Add salt, black pepper, cayenne pepper, and Dijon mustard.
- Whisk until smooth and creamy.
- Taste and adjust seasoning as needed.
- Fold in fresh herbs.
- Cover and refrigerate for at least 30 minutes before serving.
Notes
Chilling the aioli helps the garlic flavor mellow and fully develop. Roasted garlic can be used for a sweeter, milder sauce.
