- 2 lbs ground beef (80/20)
- 1 cup breadcrumbs (or oats/panko)
- 2 large eggs
- 1/2 cup milk (or dairy-free milk)
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup ketchup, divided
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup fresh parsley, chopped
- Optional: 1/2 tsp smoked paprika
Instructions
- In a large bowl, gently mix ground beef, breadcrumbs, eggs, milk, onion, garlic, 1/4 cup ketchup, Worcestershire sauce, thyme, salt, pepper, parsley, and paprika.
- Shape the mixture into a loaf that fits comfortably inside a 6-quart crockpot.
- Place the loaf into the crockpot and spread remaining 1/4 cup ketchup evenly over the top.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until internal temperature reaches 160°F (71°C).
- Optional: Transfer to a baking sheet and broil for 3–4 minutes for a caramelized top.
- Rest 10 minutes before slicing and serving.
Notes
Avoid overmixing to keep the meatloaf tender. Let rest before slicing to retain juices. A foil or parchment sling makes removal easy.
