Ingredients

  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1 1/2 teaspoons salt
  • 1 1/2 cups whole milk, lukewarm
  • 1/4 cup unsalted butter, melted
  • 1 1/2 cups unsalted butter, cold
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 tablespoons ground cinnamon
  • 1/4 cup unsalted butter, melted for brushing

Instructions

  1. In a bowl, mix flour, sugar, yeast, and salt.
  2. Add milk and melted butter, then knead until smooth and elastic.
  3. Place dough in an oiled bowl, cover, and let rise for 1 hour until doubled.
  4. Flatten cold butter into an 8×8-inch square and chill.
  5. Roll dough into a 12×12-inch square and place butter in the center.
  6. Fold dough over butter, roll into a rectangle, and fold into thirds.
  7. Chill for 30 minutes and repeat folding two more times.
  8. Roll dough into a 12×20-inch rectangle.
  9. Brush with melted butter and sprinkle evenly with cinnamon sugar.
  10. Roll tightly into a log and cut into 12 equal pieces.
  11. Place pieces cut-side up into a greased muffin tin.
  12. Proof for 45–60 minutes until puffy.
  13. Bake at 400°F (200°C) for 18–22 minutes until golden.
  14. Brush with butter and coat with extra cinnamon sugar before serving.

Notes

Keep the butter cold during lamination for the flakiest layers and avoid overproofing to maintain structure.
