- 8 oz cream cheese, softened
- 1 1/2 cups whole milk
- 1/4 cup buffalo sauce
- 6 oz Monterey Jack cheese, shredded
- 1/2 cup blue cheese crumbles
- Fresh parsley or chives, chopped
Instructions
- Season chicken with salt and black pepper.
- Heat olive oil in a skillet and cook chicken 5 to 7 minutes per side until fully cooked.
- Remove chicken, let rest, then dice or shred and toss with buffalo sauce.
- Cook pasta according to package instructions until al dente and drain.
- Melt butter in a saucepan over medium heat.
- Add cream cheese and stir until smooth.
- Gradually whisk in milk until creamy.
- Reduce heat and stir in Monterey Jack and blue cheese until melted.
- Add cooked pasta to the sauce and toss to coat.
- Fold in buffalo chicken and mix gently.
- Adjust seasoning and serve garnished with parsley or chives.
Notes
Use freshly shredded cheese and keep heat low when making the sauce to prevent curdling or grainy texture.
