  • 1 lb lean ground beef or turkey
  • 34 bell peppers, diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5–15 oz) diced tomatoes with juices
  • 45 cups low-sodium beef or vegetable broth
  • 1 cup long-grain white rice, rinsed
  • 2 teaspoons Italian seasoning
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 1 tablespoon tomato paste (optional)
  • 1 teaspoon Worcestershire sauce (optional)
  • 1 can (15 oz) kidney or black beans (optional)

Instructions

  1. Press Sauté on the Instant Pot and allow it to heat.
  2. Add ground meat and cook until mostly browned, breaking it apart.
  3. Add onion and garlic; sauté until fragrant and softened.
  4. Stir in diced bell peppers and seasonings; cook 1–2 minutes.
  5. Add 1/4 cup broth and scrape the bottom to deglaze.
  6. Add remaining broth, tomatoes, optional beans, and tomato paste.
  7. Add rinsed rice and gently press it below the liquid (do not stir).
  8. Seal lid and pressure cook on High for 10 minutes.
  9. Allow natural pressure release for 5 minutes, then quick release.
  10. Stir well and adjust seasoning before serving.

Notes

Always deglaze the pot after sautéing to prevent a burn warning. For a low-carb version, replace rice with cauliflower rice and reduce pressure cook time to 5 minutes.
