- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 3 carrots, peeled and chopped
- 3 celery stalks, chopped
- 2 potatoes, peeled and diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 6 cups vegetable broth
- 1 can (14 ounces) diced tomatoes, with juice
- 1 cup frozen peas
- 1 cup frozen corn
- 1 cup chopped kale or spinach
- 1 tablespoon lemon juice (optional)
- Grated Parmesan cheese, for serving (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and sauté for about 5 minutes until translucent.
- Stir in garlic and cook for 1 minute until fragrant.
- Add carrots, celery, potatoes, salt, pepper, thyme, and oregano.
- Cook for 2 minutes, stirring to coat vegetables with seasoning.
- Pour in vegetable broth and diced tomatoes with juice.
- Bring to a boil, then reduce heat and simmer covered for 20 minutes.
- Stir in peas, corn, and kale or spinach.
- Simmer uncovered for 5 minutes until greens are wilted.
- Add lemon juice if using and adjust seasoning to taste.
- Serve hot with grated Parmesan if desired.
Notes
For a creamier texture, blend half of the soup before serving. Add red pepper flakes for extra warmth.
