Ingredients

  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 2 potatoes, peeled and diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 6 cups vegetable broth
  • 1 can (14 ounces) diced tomatoes, with juice
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 cup chopped kale or spinach
  • 1 tablespoon lemon juice (optional)
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and sauté for about 5 minutes until translucent.
  3. Stir in garlic and cook for 1 minute until fragrant.
  4. Add carrots, celery, potatoes, salt, pepper, thyme, and oregano.
  5. Cook for 2 minutes, stirring to coat vegetables with seasoning.
  6. Pour in vegetable broth and diced tomatoes with juice.
  7. Bring to a boil, then reduce heat and simmer covered for 20 minutes.
  8. Stir in peas, corn, and kale or spinach.
  9. Simmer uncovered for 5 minutes until greens are wilted.
  10. Add lemon juice if using and adjust seasoning to taste.
  11. Serve hot with grated Parmesan if desired.

Notes

For a creamier texture, blend half of the soup before serving. Add red pepper flakes for extra warmth.
