- 1 pound (450g) ground pork sausage
- 8 ounces (225g) cream cheese, softened
- 1 (10-ounce/283g) can Rotel tomatoes with green chilies, drained
- 1 1/2 cups (180g) Bisquick baking mix
- 2 cups (200g) shredded cheese (cheddar, Mexican blend, or pepper jack)
- Optional: 1/2 tsp garlic powder
- Optional: 1/2 tsp onion powder
- Optional: pinch of black pepper
- Optional: 2 tbsp chopped green onions
- Optional: 1–2 diced jalapeños
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Mix sausage and softened cream cheese until smooth and fully combined.
- Add drained Rotel and shredded cheese and mix until evenly distributed.
- Incorporate Bisquick and optional seasonings until mixture holds together.
- Shape mixture into 1-inch balls using a tablespoon or scoop.
- Place balls 1 inch apart on prepared baking sheet.
- Bake 18–25 minutes until golden brown and internal temperature reaches 165°F (74°C).
- Let rest 5 minutes before serving.
Notes
Drain Rotel thoroughly to prevent soggy sausage balls. Chill mixture 15 minutes if too soft to shape.
