This easy Reuben bake recipe turns the classic Reuben sandwich into a mess-free casserole layered with corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing, all baked under golden crescent roll dough. Perfect for weeknight dinners, potlucks, or game day.

- 1 lb cooked corned beef, chopped
- 1 cup sauerkraut, drained and patted dry
- 1 cup Swiss cheese, shredded
- 1/2 cup Thousand Island dressing
- 1 package refrigerated crescent roll dough
- 1 teaspoon caraway seeds (optional)
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a bowl, mix corned beef, sauerkraut, Swiss cheese, Thousand Island dressing, salt, pepper, and caraway seeds.
- Unroll crescent dough and press into the bottom of the baking dish, sealing seams.
- Spread the corned beef mixture evenly over the dough.
- Top with remaining crescent dough, sealing edges as needed.
- Bake for 20–25 minutes until golden brown and bubbly.
- Cool for 5 minutes, slice, and serve warm.
Notes
Drain the sauerkraut thoroughly to prevent a soggy crust and allow the casserole to rest before slicing for clean portions.
