Instructions

  1. Whisk flour, baking powder, and salt together; set aside.
  2. Cream softened butter and 3/4 cup sugar for 3–5 minutes until light and fluffy.
  3. Beat in egg, then vanilla extract until combined.
  4. Add gelatin powder and mix until fully incorporated.
  5. Slowly mix in dry ingredients until just combined; add milk if dough is too dry.
  6. Form dough into a disc, wrap in plastic, and chill for 1 hour.
  7. Roll dough into 1-inch balls and coat in sugar.
  8. Place on lined baking sheets, spaced 2 inches apart.
  9. Bake at 350°F (175°C) for 8–10 minutes until edges are set.
  10. Cool 5 minutes on baking sheet, then transfer to a wire rack.

Notes

Chilling the dough prevents spreading, and underbaking slightly keeps cookies soft and chewy. Different gelatin flavors affect both color and intensity.
