Brownie Base
- 1/2 cup unsalted butter, diced
- 3 oz unsweetened baking chocolate, chopped
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 teaspoon instant espresso powder
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon kosher salt
- 3/4 cup all-purpose flour
- Powdered sugar, for dusting
Raspberry Buttercream
- 12 oz fresh or frozen raspberries
- 1/2 cup unsalted butter, room temperature
- 1/2 teaspoon lemon juice
- 3 1/2 cups powdered sugar
- Pinch of kosher salt
Instructions
- Preheat oven to 325°F and line a 9×13-inch pan with foil, leaving overhang.
- Melt butter and chocolate together over very low heat, stirring until smooth.
- Whisk sugar into chocolate mixture until combined.
- Add eggs one at a time, whisking well after each addition.
- Stir in espresso powder, vanilla, and salt.
- Gently fold in flour until just combined.
- Spread batter evenly in prepared pan.
- Bake for about 20 minutes until a toothpick shows moist crumbs.
- Cool brownies completely before removing from pan.
- Cook raspberries over medium heat until broken down.
- Strain raspberries and reduce juice to 1/4 cup; cool completely.
- Beat butter until fluffy, then mix in raspberry juice, lemon juice, salt, and powdered sugar.
- Cut brownies using a heart-shaped cookie cutter.
- Pipe buttercream onto one brownie heart and sandwich with another.
- Dust with powdered sugar before serving.
Notes
Allow brownies to cool fully before cutting for clean heart shapes. Do not overbake—slightly underbaked brownies produce the best fudgy texture.
