Brownie Base

  • 1/2 cup unsalted butter, diced
  • 3 oz unsweetened baking chocolate, chopped
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon instant espresso powder
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon kosher salt
  • 3/4 cup all-purpose flour
  • Powdered sugar, for dusting

Raspberry Buttercream

  • 12 oz fresh or frozen raspberries
  • 1/2 cup unsalted butter, room temperature
  • 1/2 teaspoon lemon juice
  • 3 1/2 cups powdered sugar
  • Pinch of kosher salt

Instructions

  1. Preheat oven to 325°F and line a 9×13-inch pan with foil, leaving overhang.
  2. Melt butter and chocolate together over very low heat, stirring until smooth.
  3. Whisk sugar into chocolate mixture until combined.
  4. Add eggs one at a time, whisking well after each addition.
  5. Stir in espresso powder, vanilla, and salt.
  6. Gently fold in flour until just combined.
  7. Spread batter evenly in prepared pan.
  8. Bake for about 20 minutes until a toothpick shows moist crumbs.
  9. Cool brownies completely before removing from pan.
  10. Cook raspberries over medium heat until broken down.
  11. Strain raspberries and reduce juice to 1/4 cup; cool completely.
  12. Beat butter until fluffy, then mix in raspberry juice, lemon juice, salt, and powdered sugar.
  13. Cut brownies using a heart-shaped cookie cutter.
  14. Pipe buttercream onto one brownie heart and sandwich with another.
  15. Dust with powdered sugar before serving.

Notes

Allow brownies to cool fully before cutting for clean heart shapes. Do not overbake—slightly underbaked brownies produce the best fudgy texture.
