- 1 bag (30 oz) frozen hash browns, thawed
- 8 tbsp (1 stick) butter, melted
- 1 can (10 ¾ oz) condensed cream of chicken soup
- 1 small onion, chopped
- 2 cups cheddar cheese, shredded and divided
- 1 cup sour cream
- 1 tsp salt
- ½ tsp pepper
Instructions
- Thaw frozen hash browns thoroughly and finely chop the onion.
- In a large bowl, mix onion, 1 cup cheddar cheese, salt, pepper, sour cream, and cream of chicken soup.
- Fold in thawed hash browns and melted butter until evenly coated.
- Preheat oven to 350°F and grease a 9×11-inch baking dish.
- Spread mixture evenly into the dish and top with remaining 1 cup cheddar cheese.
- Bake for 45–60 minutes until golden brown and bubbling. Rest 5–10 minutes before serving.
Notes
For extra flavor, add garlic powder or minced garlic. For a crispy top, broil the casserole for the last 2–3 minutes.
