- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
- 2 large eggs, room temperature
- 3 ripe bananas, mashed
- 1 cup Greek yogurt (plain or vanilla)
- 1/3 cup pure maple syrup
- 1/4 cup packed brown sugar
- 1/2 cup chocolate chips or chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (176°C) and grease a 9×5-inch loaf pan or line with parchment paper.
- In a large bowl, whisk together the flour, baking soda, and salt.
- In a separate bowl, lightly beat the eggs, then mix in mashed bananas, Greek yogurt, maple syrup, and brown sugar until smooth.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined.
- Fold in chocolate chips or nuts if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use very ripe bananas for the best flavor and sweetness. Avoid overmixing to keep the bread soft and moist.
