Description

Traditional Irish colcannon made with creamy mashed potatoes, tender cabbage, butter, and green onions for an authentic, comforting classic.


Ingredients

  • 2 lb starchy potatoes, peeled and cut into chunks
  • 4 cups green cabbage, chopped
  • 4 green onions, chopped
  • 4 tablespoons butter
  • 0.5 cup milk or heavy cream
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Peel and cut the potatoes into even chunks.
  2. Place the potatoes in a large pot and cover with salted water.
  3. Bring to a boil and simmer until fork-tender.
  4. Drain the potatoes and let them steam-dry in the pot.
  5. Melt the butter in a skillet over medium heat.
  6. Add the chopped cabbage and sauté until tender.
  7. Stir in the green onions and cook briefly.
  8. Warm the milk or cream in a small saucepan.
  9. Mash the potatoes until mostly smooth.
  10. Add the warm milk and mash until creamy.
  11. Fold the cabbage mixture into the potatoes.
  12. Season with salt and black pepper.
  13. Serve hot with extra butter on top.

Notes

Use warm milk and avoid over-mashing to keep the colcannon light and creamy.
