- 3 cups diced potatoes, pre-cooked (boiled, roasted, or canned and well-drained)
- 1 cup chopped yellow onion
- 2 cups cooked corned beef, chopped
- 2 tablespoons butter
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and freshly cracked black pepper, to taste
Instructions
- Heat a large cast-iron or heavy skillet over medium heat for 1–2 minutes.
- Add butter and allow it to melt and lightly foam.
- Add potatoes in a single layer and cook undisturbed for 5–6 minutes until golden.
- Flip potatoes and cook an additional 3–4 minutes.
- Push potatoes aside and add onions; cook 2–3 minutes until softened.
- Stir in corned beef, garlic powder, onion powder, and black pepper.
- Press mixture lightly into the pan and cook 4–5 minutes.
- Stir, press again, and cook another 4–5 minutes until crispy.
- Season with salt, remove from heat, and serve hot.
Notes
For extra crispiness, avoid stirring too often and use a cast-iron skillet. Serve with fried or poached eggs for a classic breakfast.
