- 4 medium potatoes, peeled and diced
- 1 cup green cabbage, finely chopped
- 1 cup kale, stems removed and chopped
- 1 medium leek, sliced
- 1 onion, diced
- 2 green onions, sliced for garnish
- 3 cups vegetable broth
- 2 cups milk
- 4 tablespoons butter
- Salt to taste
- Black pepper to taste
- 0.5 teaspoon nutmeg
Instructions
- Melt the butter in a large pot over medium heat.
- Add the diced onion and sliced leek and sauté until soft and fragrant.
- Add the diced potatoes and stir to coat with butter.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and add the chopped cabbage and kale.
- Simmer until the potatoes are fork-tender.
- Blend the soup until creamy, leaving some texture if desired.
- Stir in the milk, salt, black pepper, and nutmeg.
- Heat gently without boiling.
- Serve warm garnished with sliced green onions.
Notes
Do not boil the soup after adding milk to keep the texture smooth and creamy.
