Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 cup green cabbage, finely chopped
  • 1 cup kale, stems removed and chopped
  • 1 medium leek, sliced
  • 1 onion, diced
  • 2 green onions, sliced for garnish
  • 3 cups vegetable broth
  • 2 cups milk
  • 4 tablespoons butter
  • Salt to taste
  • Black pepper to taste
  • 0.5 teaspoon nutmeg

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the diced onion and sliced leek and sauté until soft and fragrant.
  3. Add the diced potatoes and stir to coat with butter.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and add the chopped cabbage and kale.
  6. Simmer until the potatoes are fork-tender.
  7. Blend the soup until creamy, leaving some texture if desired.
  8. Stir in the milk, salt, black pepper, and nutmeg.
  9. Heat gently without boiling.
  10. Serve warm garnished with sliced green onions.

Notes

Do not boil the soup after adding milk to keep the texture smooth and creamy.
