- ¾ cup granulated sugar
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup chilled butter, cubed
- 1 egg, beaten
- 2 tbsp milk
- 2¼ cups fresh or frozen cherries, pitted
- 3 tbsp granulated sugar (for filling)
- 2 tbsp cornflour (cornstarch)
Instructions
- Preheat oven to 375°F (190°C) and grease or line an 8×8-inch baking pan.
- In a bowl, whisk flour, sugar, baking powder, and salt.
- Cut in chilled butter until crumbly.
- Stir in egg and milk until a soft dough forms.
- Reserve ½ cup of the crumb mixture for topping.
- Press remaining dough evenly into the prepared pan.
- Toss cherries with sugar and cornflour until coated.
- Spread cherry mixture evenly over the crust.
- Sprinkle reserved crumbs over the top.
- Bake for 32 minutes until golden and bubbling.
- Cool, then chill for cleaner slices before cutting into bars.
