- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1/2 cup strawberry milk
- 1/2 cup sour cream
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup strawberry preserves or puree
- 1/2 cup finely chopped fresh strawberries
- 1 cup powdered sugar
- 2–3 tablespoons strawberry milk (for glaze)
- 1/2 teaspoon vanilla extract (for glaze)
- Pinch of salt
Instructions
- Preheat oven to 325°F (163°C) and grease and flour a bundt or loaf pan.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each.
- Whisk strawberry milk, sour cream, and vanilla together.
- Sift flour, baking powder, and salt together.
- Alternate adding dry and wet ingredients to the batter, mixing just until combined.
- Fold in strawberry preserves and chopped strawberries.
- Pour batter into prepared pan and smooth the top.
- Bake for 60–70 minutes until a toothpick comes out with moist crumbs.
- Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
- Whisk glaze ingredients and drizzle over cooled cake.
Notes
Do not overmix the batter and allow the cake to cool fully before glazing for best texture and appearance.
