  • ½ cup Gruyère cheese, grated
  • 2 teaspoons fresh thyme leaves, chopped
  • 2 teaspoons fresh rosemary, finely minced
  • 1 tablespoon fresh chives, thinly sliced

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. Add cold cubed butter and cut into the flour until mixture resembles coarse crumbs.
  4. Stir in grated cheeses and chopped herbs until evenly distributed.
  5. Make a well in the center and pour in cold buttermilk, mixing gently until a shaggy dough forms.
  6. Turn dough onto a lightly floured surface and pat into a 1-inch thick circle.
  7. Cut into 8 wedges or use a round cutter and place on prepared baking sheet.
  8. Brush tops with beaten egg.
  9. Bake for 18–22 minutes until golden brown and firm to the touch.
  10. Cool on a wire rack for 5 minutes before serving.
