- 1 tbsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp cayenne pepper
- 1/2 tsp salt
- 1/2 tsp black pepper
- 4 cod fillets (about 6 oz each)
- 2 tbsp extra-virgin olive oil
- 1 fresh lemon, cut into wedges
Instructions
- Preheat oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
- In a bowl, mix paprika, garlic powder, onion powder, thyme, oregano, cayenne, salt, and black pepper to create the blackened seasoning.
- Pat cod fillets completely dry with paper towels. Brush both sides with olive oil.
- Generously coat each fillet with the seasoning blend, pressing lightly to help it stick.
- Arrange fillets on the baking sheet, leaving 2 inches between each piece.
- Bake for 12–15 minutes, until fish flakes easily with a fork and reaches 145°F internal temperature.
- Let rest for 2–3 minutes before serving with fresh lemon wedges.
Notes
Use smoked paprika for deeper flavor, or reduce cayenne for a milder version. Cod can be substituted with mahi-mahi or halibut. Leftovers keep 3 days refrigerated or up to 2 months frozen.
