Instructions
- Preheat your oven broiler to high and position the rack about 6 inches from the heat source.
- Using kitchen shears, cut through the top of each lobster shell lengthwise and carefully lift the meat through the opening, keeping it attached at the base (butterfly technique).
- In a bowl, whisk melted butter, minced garlic, lemon juice, lemon zest, parsley, paprika, Old Bay, and salt until fully combined.
- Place lobster tails on a parchment-lined baking sheet and brush generously with the garlic butter mixture, reserving 3 tablespoons for finishing.
- Broil for 8–10 minutes or until lobster meat is opaque and reaches 140–145°F internally. Avoid overcooking.
- Remove from oven and immediately brush with the reserved garlic butter for a glossy finish.
- Garnish with chopped parsley, extra paprika, and lemon wedges before serving.
