  • 2 cups (248g) all-purpose flour
  • 1/3 cup (67g) brown sugar (or coconut sugar)
  • 1 tbsp baking powder
  • 1/2 tsp salt

  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 6 tbsp (85g) cold unsalted butter, cubed
  • 1/2 cup (122g) pumpkin puree
  • 3 tbsp milk or cream (or plant-based milk)
  • 1 large egg
  • 1 tsp vanilla extract

For the Vanilla Glaze:

  • 1 cup (114g) powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract

For the Pumpkin Spice Glaze:

  • 1 cup (114g) powdered sugar
  • 1 tbsp pumpkin puree
  • 1/2 tsp pumpkin pie spice
  • 12 tbsp milk

Instructions

  1. Preheat oven: Set to 400°F (200°C). Line baking sheet with parchment paper.
  2. Mix dry: Combine flour, brown sugar, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
  3. Cut in butter: Add cubed cold butter, cutting in until mixture looks like coarse crumbs with pea-sized bits.
  4. Mix wet: In another bowl, whisk pumpkin puree, milk, egg, and vanilla until smooth.
  5. Combine: Add wet to dry, stir gently until just combined. Dough will be slightly sticky.
  6. Shape: Pat dough into 8-inch circle, 1-inch thick. Cut into 8 wedges.
  7. Bake: Place wedges 2 inches apart on sheet. Bake 14–16 minutes until golden brown. Cool completely.
  8. Glazes: Mix vanilla glaze ingredients. Separately, whisk pumpkin glaze ingredients.
  9. Finish: Drizzle vanilla glaze first, let set 5 minutes, then top with pumpkin glaze. Serve and enjoy.
