- 1 cup corn kernels (fresh or frozen)
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Substitutions: Ground turkey, chicken, or plant-based protein for beef; vegetable broth for beef broth; sweet potatoes for white potatoes.
Instructions
- Brown the beef: In a large pot, cook ground beef 6–8 minutes until no longer pink. Drain excess fat, leaving 1 tbsp for flavor.
- Sauté aromatics: Add onion, garlic, carrots, and celery. Cook 5 minutes until softened and fragrant.
- Add remaining ingredients: Stir in tomatoes, potatoes, corn, Italian seasoning, and broth. Mix well.
- Simmer: Bring to a boil, then reduce heat. Simmer uncovered 25–30 minutes until potatoes are fork-tender.
- Finish: Season with salt and pepper. Garnish with fresh parsley before serving.
