- 1 pound lean ground beef (85/15 recommended)
- 1 medium yellow onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning
- 2 cups red enchilada sauce
- 8 flour or corn tortillas (8-inch size)
- 2 cups shredded cheese, divided
- Optional: 1/2 cup corn kernels
- Optional: 4 ounces diced green chiles
- Optional: 1/4 cup fresh cilantro
Instructions
- Preheat oven to 375°F.
- Cook ground beef and diced onions in a skillet for 5–7 minutes until beef is browned and onions are translucent. Drain excess fat.
- Add garlic and taco seasoning; cook 1 minute. Optional: stir in 1/2 cup enchilada sauce and simmer 2–3 minutes.
- Warm tortillas in the microwave for 30–45 seconds under a damp paper towel.
- Spread 1/2 cup enchilada sauce on the bottom of a 9×13-inch baking dish.
- Place 1/3 cup beef mixture into each tortilla, add 1 tablespoon cheese, roll tightly, and place seam-side down in dish.
- Pour remaining sauce over enchiladas and top with remaining cheese.
- Bake uncovered for 20–25 minutes until bubbly and golden.
- Rest 5 minutes before serving.
Notes
Warm tortillas before rolling to prevent cracking. Add vegetables like zucchini or bell peppers to the beef mixture for extra nutrition.
