Instructions

  1. Rinse and sort the dried black-eyed peas, removing any debris or discolored peas.
  2. Add peas to the crockpot, followed by onion, garlic, bell pepper, carrot, and diced tomatoes.
  3. Sprinkle in salt, pepper, smoked paprika, and cumin. Tuck the bay leaf in the center.
  4. Pour broth over the ingredients, ensuring peas are submerged. Add olive oil if using.

  6. Once tender, remove bay leaf and shred any meat if added. Stir in greens if using.
