- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, finely chopped
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon paprika or chili flakes (optional)
- 2–3 slices bacon, cooked and crumbled (optional)
- 1 cup panko breadcrumbs
- 1/4 cup unsalted butter, softened
- 2 cloves garlic, minced
- 2 large eggs, beaten
- 1 cup all-purpose flour
- Oil for frying or baking spray
Instructions
- Boil diced potatoes in salted water until fork-tender, then drain well.
- Mash potatoes while warm and mix with cheddar, Parmesan, parsley, salt, pepper, paprika, and bacon.
- Let mixture cool slightly, then shape into golf ball-sized rounds.
- Insert a small cube of cheese into the center of each ball and seal.
- Roll balls in flour, then egg, then breadcrumbs.
- Mix butter with garlic and brush over coated balls.
- Bake at 400°F (200°C) for 20–25 minutes until golden and crispy.
- Serve hot with ranch or marinara sauce.
Notes
For best results, chill shaped bombs for 10 minutes before baking to help them hold their shape and prevent cheese leakage.
